Probiotics are living microorganisms, which can be added to food, beverages and promote health.

The human body has the previous mentioned cultured bacteria, naturally as part of their digestive flora it is ingested on a regular basis through certain foods such as whole grains, garlic, onions, vegetables or yogurt; however, the concentration of the ingested bacteria may be too low to represent a favorable contribution. Thereupon, foods and beverages can be added with probiotics with the purpose of favoring the balance and presence of these organism in the body, as well as to promote the proper functioning of the body. Probiotic cultures remain alive and active from their integration into the product, as after their ingestion; they work as nutrients for the human microbiota.

Lactic cultures are bacteria, responsible for fermenting and producing lactic acid, which provide beneficial qualities to the product, including protection against other organisms and naturally keeping the product in good condition. Lactic cultures include lactobacilli and are useful in the manufacture of different types of cheese, yogurt, and other fermented dairy products.

Both, probiotics and dairy cultures can be added to products from the food and beverage industry, with the goal of improving our digestion, health and well-being.
